Meet Pearl + Co Head Chef Mark Rogers

The food purist, who previously worked at Bruny Island Premium Wine Bar & Grill, is bringing his acclaimed style using seasonal and local produce to present his menu for Pearl + Co diners.

He will add a fresh and innovative dimension to the culinary calibre at Pearl + Co.

Along with a new chef is a new and improved menu. Some of Pearl + Co new menu Items include:

-          HUON SALMON THREE WAYS  

o   confit salmon, shaved fennel and salmon pearls

o   pastrami salmon and sweet mustard sauce

o   gin and beetroot cured salmon with crispbread and crème fraiche

-          TASMANIAN SCALLOPS & CAULIFLOWER VELOUTE

o   rich creamy cauliflower soup, Tasmanian scallops in nut brown butter, lemon & parsley
